Probably the highest for me for a gondola would be the old Lionshead at Vail, it seemed especialy high when you sit up there for about two hours swaying in high winds plus I was much younger then so it probably seemed much higher. For a tram it would be the Klein Matterhorn tram in Zermatt that ends in the side of the mountain.

For me it might be the Peak 8 SuperConnect, or maybe the gondi at Steamboat. They don't seem high, but when the lift stops and you look down...

I believe that the SuperConnect was the first lift I rode on that had the three seperate poles, bolted together.

We've talked about low lifts, now let's talk about high lifts.
I'd say that the highest open-air lift that I have been on is either Resolution at Copper or Peak 8 Superconnect over one span where it has a triple-segment tower.
The highest gondola I've been on hands-down is the Silver Queen Gondola at the lattice tower with two heads on it. That has to be near 200 feet.

The last span on the Riva Bahn at Vail is hands down the highest chair in the state of Colorado.

I'm not sure of specifics, but I know that the Slide Brook Express crosses some pretty deep valleys over it's 2 mile length.
Chairlift n. A transportation system found at most ski areas in which a series of chairs suspended from a cable rapidly conveys anywhere from one to eight skiers from the front of one line to the back of another.

The Panorama Gondola at Mammoth mountain is the highest lift I have been on. The highest chairlift is Red Dog at Squaw Valley.
does the cable car at squaw go higher than the mammoth gondola?

Gondolas:
Aspen's
Steamboat's (Past the first crest is really high)
I agree with you on Vail's gondi and Keystone's River Run
Chairs:
Resolution at Copper after the depression sheaves up the steep part
American Flyer at Copper has about two high points a couple towers after the bead tree
That new 6 pack at Mary Jane (name slips my mind) has some high points towards the top where it traverses the hill

The highest chair I have been on is the Millicent lift at Brighton, UT between towers 12 & 13. Since the chairs are center-bar double, you can look off to the side and see straight down. The first time I rode that chair, they did an E-stop while I was going over that section. I quickly grabbed the center bar (even after nearly 30 years of riding many different types of lifts). It will be interesting to see how they engineer that section if/ when it is replaced by a HSQ.
Another high chairlift is the Argentine at Keystone (I have forgotton tower numbers) when it passes over the creek about 1/2 way up. The side-bar style double chairs take away some of the effect compared with Brighton's lift.
