so are there such things? Could a 5 person fit in the pylon of a 4 person?

I have never seen a 5 person chair but doesn't mean they don't exist. As for using a 5 person chair on a quad if they did exist I would say no. The clearance between the tower and the chairs would be too close. Also adjustments would have to be done for the sizes of the rocker assemblies due to the extra weight. I imagine if the tower heads were changed to compensate for the size and weight difference it could work but would be costly.

Well, another thing to be considered is that people screw up enough already on 4 person lifts. Adding another person loading and unloading could increase the chance of having the lift stop because fails.
Case and point ; Okemo. Though it has two more than it's predecessor lift, the lift slowed or stopped entirely several times.

A five seater lift, theoretically, would use towers of six-pack width.

Sounds like more engineering which would drive up the price of already expensive machines. Not that it's impossible, but why bother when there are quads and six-packs?

With a 6 second load interval a quad can do 2,400pph and a 6 can do 3,600. A 5 with the same chair interval could do 3,000. There are plenty of 6-packs with 3,000pph and even some as low as 2,400, so there is no point to getting a 5 seater. Just get a 6-pack with a chair interval that allows for the desired capacity.

I've seen five butts get stuffed into a 4-pack.

I think I have a photo somewhere of seven people in a single chair on the Independence SuperChair (a six pack).
